Coriander and Chicken Curry

INGREDIENTS

Italian Meatballs

Banana and Fig Loaf

5 ripe banana’s mashed

10 normal dates pitted and chopped

100g dried figs chopped

1 ½ cups freshly squeezed apple juice

1/3 cup coconut oil

1 egg (free range)

Pinch of Salt

1 cup shredded coconut

1 cup almond meal

½ cup gluten free baking mix

½ cup buckwheat flour

½ cup coconut flour

2 Tbsp baking powder

 

Blend all ingredients together except flour and baking powder.

 

Fold in flour and baking powder.

 

Bake for 1 hour at 180 degrees C.
