Fish and Kumara Taramind Curry

This salad was inspired by Henrik Orre, the chef for the Sky Cycling Team. I’ve added a few of my own touches to it and removed some ingredients to make it more balanced for the general population. So very easy to make. Great for serving at BBQ’s or with cooked fish.

INGREDIENTS

Sausage Rolls

100g mixed quinoa – rinsed, soaked then boiled

1 cup of cherry tomatoes, chopped in half or thirds

½ red onion sliced thin

2 ripe avocado’s, cubed into small chunks

4 fresh ripe apricots, cubed into small chunks

4 Tbsp’s of raisins

1 handful of chopped parsley

Lime juice of one lime

Dash of olive oil

METHOD

Very easy to make. Take the quinoa, tomatoes, onion, avocado, apricots and raisins and carefully toss in a large bowl. Add the lime juice and olive oil and give another gentle mix. Sprinkle the parsley on top and toss lightly.

 

Serves 4.
